Originally from Africa, this legume has been grown by Native American farmers for countless generations. The Tohono O'odham call this plant "U'sus mu;n" and have long valued its ability to tolerate high heat and drought and still produce prolifically in the low desert. Sprawling plants (they may need support) with yellow flowers produce 6-7" purple-tinged pods. The beans have lovely black and white markings, like a Holstein cow. Although the seeds can be eaten green or dry, this plant is also used as a cover crop. Pods should be harvested as they dry; if left too long on the plant they will pop open and disperse their seeds. A mainly self-pollinating annual.
