The Bull's Blood Beets is a smallish (8-10") plant with spectacular foliage that will intensify into a deep burgundy color as it matures. These leaves have a taste somewhat similar to radicchio and can be enjoyed as a baby green in as little 35 days but are still great when full grown and chard-like. As wonderful as the leaves are, the small sweet roots are equally beguiling. They will be about 2-3" and darkish red with pink candy stripes and are at their sweetest when harvested young. Both ends of this versatile plant can be eaten cooked or raw. For best results, grow in full sun in cool weather.
Days To Maturity: 35 days for baby leaf tops, 55 days for edible roots
- Soak seed balls in water for 12 hours before planting to hasten germination. Two weeks before last frost sow seeds directly in garden ¼" deep and 1-2" apart. Make sure seeds are in good contact with the soil. Germination usually takes 10-12 days.
- For continuous yields, sow seeds every 3-4 weeks until 90 days before first expected frost. As soil gets warmer and drier, sow seeds deeper, until summer plantings are 2"deep. When seedlings are 6" tall, thin to 4-6" apart.
