The Waltham Butternut Squash is one of the most popular butternuts around for both home and market growers. This easy to grow squash will produce uniform (about 8-12 x 3½" and weighing 3-6 lbs.), pear-shaped fruit with thick cylindrical necks and smooth light tan skin. Inside the squash, you will find a smaller seed cavity than most surrounded by orange-yellow flesh. This flesh has a nice dry texture and a superb nutty flavor. As it matures, the squash will become deep orange in color and the flesh will grow even sweeter. This high yielding plant will put out vigorous, spreading vines. If you plan on keeping your squash (and this does keep well), it is best to harvest when the vines have died or slipped from the squash. You are only limited by your imagination as to how eat these squash; they are great in pies, steamed, mashed, broiled and baked.
