A staple of the Asian diet since at least the 11th century B.C., soybeans offer many health benefits due to the isoflavones they contain. Sweeter and more digestible than other soybeans, Edamames are the soybean of choice for many. Although these well-branched, tall (up to 30") and sturdy plants are well adapted throughout the U.S. and Canada, their extra-early maturing makes them especially suited to areas with shorter growing seasons. These super-producers will yield plentiful pods with 2-3 seeds per pod. Seeds will be buff colored, sweet, smooth and buttery. To enjoy these beans as traditional Edamame, simply boil or steam them and serve with a splash of sea salt.
