This gorgeous lettuce has been traced back to 1793 and its beautiful coloration has led to many names, including Speckled Trout and Freckles. The plant will produce loose, medium sized (8-12") romaine heads, which can be harvested when as small as 4-6" but are sweet and tender fully grown. The leaves are light to dark green and covered with pomegranate-red speckles. You can enjoy this beauty all season long; it can handle cooler germination temperatures and yet is slow to bolt in warmer weather. Many people even have success over-wintering this plant by covering it with straw or using a greenhouse. The sweet, mild, buttery flavor reminds many people of a butter lettuce rather than a romaine.
